Delicious Korean radish kimchi!
Korean spicy radish kimchi is a variation of the traditional napa cabbage kimchi, made with cubed Korean radishes (Mu 무). This form of kimchi was actually created on accident, but the delicious taste quickly grew in popularity. Radish kimchi often tends to last longer than radish kimchi in terms of fermentation and often enjoyed as a side dish with a hearty bowl of Korean both broth stew.
Note from the owner:
This is one of my youngest daughter's favorite forms of kimchi. Whenever I make Sagol-guk (사골국) or Beef Bone Marrow Soup, she prefers radish kimchi over the napa cabbage! The crunch, the tang, and sweetness compliments the soup really nicely!
Ingredients: radish, red pepper powder, green onion, yellow onion, sea salt, garlic, ginger, fish sauce, sugar
