Korean Cucumber Kimchi - Oi Kimchi (UPON REQUEST)

Delicious Korean cucumber kimchi! 

Another delicious variation of the traditional Korean kimchi! This is made by stuffing Korean cucumber with various veggies. This type of kimchi does not go through as much fermentation than the other forms. If you are sensitive to the fermented flavors of kimchi, cucumber kimchi might be a great option for you to try!

I have spent years perfecting the recipe of cucumber kimchi because this is my youngest absolute favorite kimchi. While no one else in the family particularly craves it, I will continue making it for her because she will always ask for it. You might have seen cucumber kimchi become very popularized in the western society due to TikTok. There are a lot of different variations of it within different asian cultures, but this recipe is more traditional to Korea. Hope you enjoy!

Ingredients: Korean cucumbers, korean chili pepper flakes, green onion, yellow onion,  sea salt, garlic, ginger, fish sauce, sugar
