Delicious Korean cucumber kimchi! 

Another delicious variation of the traditional Korean kimchi! A little more unconventional, but very delicious for bok choy lovers. This type of kimchi does not go through as much fermentation than the other forms. If you are sensitive to the fermented flavors of kimchi, cucumber kimchi might be a great option for you to try!
